Zucchini Frittata

4 eggs
·        
4 egg whites
·        
¼ cup grated parmesan cheese
·        
¼ tsp salt
·        
2 Tbsp olive oil
·        
1 clove garlic, minced
·        
2 small zucchini, shredded
·        
2 roasted red bell peppers, cut into thin strips

1. Preheat oven to 400°F
(200°F). In medium bowl, whisk together eggs, egg whites, cheese, and salt.
2. Heat oil in large ovenproof
nonstick skillet over medium heat. Add garlic and cook for 1 minute, or just
until tender. Add zucchini and peppers and cook for 1 minute. Pour in egg
mixture and cook for 3 minutes, or until bottom of frittata is set.
3. Bake for 10 minutes, until
set.
Per serving: 138 calories, 9 g protein, 5 g
carbohydrates, 1 g fiber, 9 g total fat, 2 g saturated fat, 144 mg cholesterol,
331 mg sodium
